Banana Oat Bread - Try this easy 12-ingredient banana oat bread, you will love it!

Today I am sharing a sweet recipe, that is really simple and easy to make. I have the freezer filled with overripe bananas. They are great for smoothies. Sometimes I add them to my oatmeal in the morning, and it results in a creamier version without milk. This time I had a couple of bananas sitting on the counter and they were just calling my name. Therefore, I experimented doing some banana bread.

My pantry is always full of oats. There a versatile ingredient used for sweet or savory dishes. I also use the oats make oat flour at home. Just add a few cups of rolled oats to a blender or a food processor, and blend until you get a fine powder, like regular wheat flour.

What you will need to make your banana oat bread

For the recipe, we would need the following utensils, one large mixing bowl, a wooden spoon and a loaf pan (5×7). The ingredients required for the recipe are:

  • Medium sized overripe bananas (3)
  • Brown sugar
  • Coconut oil
  • Vanilla extract
  • Medium size eggs (2), at room temperature
  • Rolled oats, and oat flour
  • Cinnamon
  • Baking powder, salt, and baking soda
  • White chocolate chips

Steps to make your Banana Oat Bread

To start preparing your banana oat bread, you will need to preheat your oven to 350° F. In a large mixing bowl add your three bananas and mash them up. Next, you will mix in the sugar, coconut oil, vanilla extract and the two eggs lightly beaten. Mix until combined.

Next, add the dry ingredients a cup of rolled oats with the oat flour or ground oats, cinnamon, baking powder, salt and baking soda. Then fold the dry ingredients into the wet ingredients. Lastly, add half of the white chocolate chips and fold into the bread mixture.

Line a loaf pan with parchment paper and add the batter to it. Add the remaining half of the white chocolate chips to the top of the bread. Bake covered for 40 minutes then, uncover and bake for 15 minutes or until a toothpick comes out clean.

Remove from the oven and let it cool for at least 10 minutes before removing from the pan. The result would be a moist and not that sweet bread. Now you can devour your banana oat bread. Enjoy!

  • 1 cup oat flour, or ground old fashion oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons white chocolate chips
  1. Preheat your oven to 350ºF.

  2. In a large mixing bowl, add the bananas and mash them up. 

  3. Next, mix in the brown sugar, coconut oil, vanilla extract and the two eggs, until combined.

  4. Next, add the dry ingredients, old fashion oats, ground oats, cinnamon, baking powder, salt and baking soda. Then fold the dry ingredients into the wet ingredients. 

  5. Lastly, add half of the white chocolate chips and fold into the bread mixture.

  6. Line a loaf pan with parchment paper and add the batter to it. Add the remaining half of the white chocolate chips to the top of the bread. 

  7. Bake covered with aluminum foil for 40 minutes then, uncover and bake for 15 minutes or until a toothpick comes out clean. 

  8. Remove from the oven and let it cool for at least 10 minutes before removing from the pan and cutting into 10 slices. Enjoy!

Tips for making your banana oat bread

A few tips that I found could be helpful when making this recipe are the following:

  • It is better to use overripe bananas because they are sweeter. They help us use less added sugar.
  • Look for bananas with many brown spots on them, but that are still firm to the touch.
  • You can make this recipe gluten-free if you use certified gluten-free rolled oats.
  • It is easier to make your oat flour at home. Just add to a blender or food processor your rolled oats and blend away until it has a flour consistency.
  • The white chocolate chips create a nice balance and a little extra sweetness.
  • You can replace the white chocolate chip with dark or milk chocolate chips if you prefer. You can omit them completely if you don’t like the chocolate chips.
  • For a complete vegan banana oat bread, you can replace the eggs with the mixture of 2 flax eggs (Mix 2 Tbsp flaxseed meal with 5 Tbsp water and let it rest on the countertop for 3 minutes..
  • Covering the bread when baking it, will prevent it from browning too much.
  • Store it in the fridge; it will last for up to 3 days.
  • My recommendation would be, warm up a slice and put some butter on it. Alternatively, if you want it sweeter, after warming up the slice, add a scoop of vanilla ice cream.

If you are looking for a recipe to make on a special occasion, you have just found the right one for you. After searching for things in my fridge to pair with some pork chops that I had. The 💡 idea just came up. Apples, onions, mmm blue cheese what I can do with this? 🤔 A sauce!

One of my goals in the kitchen is to prevent food waste. I tested a Potato Gratin recipe using blue cheese. The amount used from the container wasn’t much. Good thing I bought some pork chops!

What you will need to make your Pan Fried Pork Chops

The utensils needed for this recipe would be a knife, a cutting board, a deep frying pan and a cooking tong. To make, this pan fried pork chops with apple and blue cheese sauce you will need the following ingredients:

  • Bone-in pork chops
  • seasonings: salt, black pepper, dry thyme
  • apples (one gala, one granny smith)
  • yellow onion
  • chicken stock
  • olive oil
  • garlic

If your pork chops have too much fat on the edges, you can trim them. To start, you will need to season the pork chops with the seasonings: salt, black pepper, garlic and dry thyme. Set aside, so the pork chops start absorbing the flavors. Next, peel and dice your apples into small cubes. Then, julienne your onion. Move to the cooking part.

Cooking your Pan Fried Pork Chops

The first thing we are going to do is the caramelized onion. This part of the recipe will take a little longer to be ready, so let’s get started. Heat up your frying pan to medium heat. Add a tsp of the olive oil to it. Now, proceed to add the julienne onions and saute for at least 15 minutes until they have become brown. If you see that it has been drying out, you can add a couple of teaspoons of water to the pan. Remove the caramelized onions from the pan and set aside.

Add more oil to the pan and let it heat up. Sear each pork chop for about 3-4 minutes on each side. Do this in batches and set aside.   • 6 bone-in pork chops (aprox (4 ounces each))
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry thyme
  • 1 teaspoon chopped garlic ((aprox 1 clove chopped))
  • 1 yellow onion
  • 1 gala apple
  • 1 granny smith apple
  • 2 tablespoon olive oil

Sauce

  • 1 tablespoon crumbled blue cheese
  • 3/4 cup chicken stock
  1. Season the pork chops with the seasonings: salt, black pepper, garlic and dry thyme. Set aside, so the pork chops start absorbing the flavors. 

  2. Peel and dice the apples into small cubes and juliennes the onion.

  3. Heat up your frying pan to medium heat and add a tsp of the olive oil to it. Once the oil is hot, add the julienne onions and saute for at least 15 minutes until they brown.   4. Add another teaspoon of oil to the pan and let it heat up. Sear each pork chop for about 3-4 minutes on each side. Do this in batches and set aside. 

  5. Next, add the last teaspoon of olive oil to the pan, and cook the apples for a couple of minutes. Add the chicken stock and the blue cheese, stir and cook for two more minutes. 

  6. Add back the pork chops and the caramelized onions and let them simmer in the sauce for 5 minutes.

  7. Now your pan fried pork chops are ready to be devoured! Enjoy!

Since I started eating low carb dinners, it has been difficult finding new meal options. I’m one that usually gets bored quickly eating the same thing for a couple of days straight. When it was time to go grocery shopping, I managed to get a few deals in mushrooms. And I said to myself lets try to use this ingredient differently. I usually use mushrooms to make a gravy for the chicken or something similar it has to be a gravy.

This cauliflower rice recipe is easy and quick to make, a couple of ingredients, and you will have a buttery and meaty flavored side dish. When I returned from the supermarket, the idea just came up. Since a couple of months, I have been experimenting making different cauliflower “rice” flavors.

How to Prepare Mushroom Cauliflower Rice

You don’t need a lot of ingredients to make this delicious meal. You will need the following ingredients to prepare this recipe:

  • Uncooked cauliflower rice
  • Sliced mushrooms
  • Onion
  • Butter
  • Garlic powder
  • Salt
  • Pepper

If you haven’t tried cauliflower rice before, you should. Cauliflower rice is a great a low carb alternative to rice. Great for people following paleo diet too.

I recommend making it at home since it is fresher tasting, and cheaper too, you can see the tutorial in the post How to make cauliflower rice, where you will find a complete guide on how to prepare, cook, freeze and store your cauliflower rice, plus a simple recipe idea.

The utensils I used were a non-stick wok and a wooden spoon. To start making this recipe, heat up the wok to medium heat and add half of the butter to melt. Then add the sliced mushrooms and saute for 5 minutes. They will reduce in size.

Ingredients that will amplify the mushroom cauliflower rice are bacon and parmesan cheese. The parmesan cheese will give the cauliflower rice a risotto-like texture, without making the cauliflower rice mushy or too soft.

You can pair your mushroom cauliflower rice with a roasted chicken breast or a steak with gravy.

If you want to make it completely vegan, you can replace the butter with olive oil or coconut oil. This will remove the buttery flavor the mushrooms get, but it tastes just as good.

Today I’m sharing with you another salmon recipe. Most of my recipes start with things I have on hand in my pantry or fridge. I just want to test mixing flavors to create new recipes with them.
This recipe is super easy to make, and it just requires six ingredients including the salt and pepper.

As for utensils, I used a baking sheet, and a small bowl to mix the sauce ingredients. For the recipe, you will need the following ingredients:

  • Salmon
  • Honey
  • Salt-Free Teriyaki Marinade
  • Salt
  • Pepper
  • Garlic

First, line your baking sheet with parchment paper and preheat your oven to 350º F. I know I always use parchment paper, it is one of the best cooking inventions created for baking. Nothing sticks to it, and it gives you an easy cleanup, win-win situation.

To start preparing the sauce or glaze we are going to mix in a small bowl the teriyaki marinade, with the honey and the garlic. Prefer using the salt-free teriyaki marinade because you can control the amount of salt in the dish. In the past I have also used it for Turkey Teriyaki Meatballs, which are great; I may need to add this recipe to the blog as well.

Next, add the salt and the pepper to the salmon. You can use the rule of ¾ tsp of salt for each pound of meat or seafood you have. Next, rub the sauce over the entire salmon fillet. Bake the salmon for 20 minutes then cut into four fillets.

The result would be a juicy and flaky honey teriyaki salmon, just perfect for any quick dinner. The sauce turns into a sticky glaze which pairs perfectly with a side of greens or just some white rice.

If you like salmon just as much as me, you can try these other recipes Mediterranean Crusted Salmon, and the stuffed salmon fillets with spinach and cream cheese which are both ready within the 30 minutes timeframe.

Honey Teriyaki Salmon

This easy 6-ingredients honey teriyaki Salmon will make your dinner live easy, and it just takes 25 minutes from start to finish!

  • 1 pound salmon
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce or Glaze Ingredients

  • 1 tablespoon honey
  • 1/4 cup Salt-free Teriyaki Marinade (( I used Sweet Teriyaki Marinade from Mr. Dash))
  • 1 teaspoon chopped garlic
  1. Preheat oven to 350º F.

  2. Line your baking sheet with parchment paper.

  3. In a small bowl, mix the sauce ingredients (honey, teriyaki marinade and garlic)

  4. Season salmon fillet with salt and pepper, and add the sauce on top.

  5. Bake for 20 minutes. 

  6. Cut into four fillets and now your salmon is ready to enjoy!

Hi, sorry for been missing a week. I had to take a week off for personal reasons. But no worries I’m back this week with a new recipe, a sweet treat: Double Chocolate Oatmeal Peanut Butter Cookies. That is a mouthful.

I came up with this recipe after some trial and error making cookies a different way, without butter and refined flour. These cookies have been a great addition to my weekly staples. They are a great snack when you are craving something sweet. If you are a chocolate fanatic, you will love these cookies.

The cool part of this recipe is that you will only need a big bowl to mix the ingredients, a fork or a spatula and a cookie sheet pan. As for ingredients, you would need the following:

  • banana
  • peanut butter
  • egg
  • maple syrup
  • vanilla extract
  • cocoa powder
  • baking soda
  • rolled oats
  • chocolate chips (semi-sweet)

To start making these cookies, preheat your oven to 375º F. Then, we would mash our banana in the mixing bowl. Next, we are going to add the rest of the liquid ingredients: peanut butter, egg, maple syrup, and vanilla extract. Mix after each new ingredient is added to the bowl until they all incorporated, as seen on the image below.

For the dry ingredients, we would add one at the time and stir them in. Mix the baking soda and the cocoa powder with wet ingredients until well incorporated. Fold in the rolled oats into the dough until combined. Lastly, fold the chocolate chips into the dough. We can let the cookie dough sit for a couple of minutes, so the rolled oats soak up all the wet ingredients mixture.

There is no need to chill this dough. The dough must be somewhat sticky. To form the cookies I used a 1 Tbsp spoon and measured 2 Tablespoons for each cookie. If you have a cookie scoop, you can use it. Mine broke a few weeks ago, so I need to buy a new one. Drop the dough on a parchment paper lined cookie sheet and flatten the cookies a little. I used the same fork to help them have the round shape and flatten them out.

Bake the cookies in the oven for 10 minutes. Once done, let them cool for a couple of minutes before transferring to a cooling rack. I usually don’t like waiting for the cookies to cool, so I just eat them as is. I like them warm. To store them, you can leave them on the counter in an airtight container for up to 2 days. To prevent the chocolate chips from melting, store the cookies in the fridge for up to a week.

Double Chocolate Oatmeal Peanut Butter Cookies

Double Chocolate Oatmeal Peanut Butter Cookies are chewy and made using only one bowl and 9 ingredients total plus no chilling dough time.

Wet Ingredients

  • 1 medium banana
  • 1/3 cup peanut butter
  • 1 large egg, at room temperature
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Dry Ingredients

  • 1/2 tsp baking soda
  • 2 tbsp cocoa powder
  • 1.5 cups rolled oats
  • 1/2 cup semi sweet chocolate chips
  1. Preheat oven to 375º F. 

  2. Line a cookie with parchment paper and set aside.

  3. In a mixing bowl, add the wet ingredients listed in the order shown, mixing after each addition. Making sure the ingredients are well incorporated.

  4. Add the baking soda and the cocoa powder to the wet ingredients and mix until combined.

  5. Fold in the rolled oats to form the cookie dough. 

  6. Next, fold in the semi-sweet chocolate chips.

  7. Let the cookie dough rest for 5 minutes. Then form cookies with a cookie scoop or a tablespoon. Add two tablespoons of dough for each cookie onto the cookie sheet.

  8. Bake the cookies for 10 minutes. Let them cool slightly and they are ready to be devoured. Enjoy.

  • You can replace the rolled oats, for quick cooking oats. Also, you can make a mixture of both types.
  • You should be able to replace the peanut butter with any other nut butter if you are allergic to peanuts.
  • You can also use certified Gluten-Free oats if you need the recipe to be gluten-free.

This Chorizo Fried Rice is just what you need for lunch or dinner, an explosion of flavors in your mouth and it just takes 30 minutes to make. | nashifood.com

In the countryside of Panama, a place named las Tablas, they make great chorizos. If you are in the city, we call them chorizo “tableño” because of where they are made. In the countryside, they are known as “choriza de puerco” in Spanish.

These homemade chorizos are made with pork, garlic, culantro, onion, sweet chili peppers, achiote, and salt. They also smoke them for long hours, so they get that red color from the achiote.

This pork chorizo fried rice will have a yellowish color instead of the traditional brown, because of the achiote in the chorizo. But the taste would be on point. This dish is a fusion, mix of Asian and Panamanian flavors.

What you will need

For this recipe, we would need the following ingredients:

  • a bag of frozen mixed vegetables
  • cooked white rice preferably to be at least a day-old
  • small yellow onion
  • five pork chorizos
  • chopped garlic
  • low sodium soy sauce
  • oyster sauce
  • sesame oil
  • avocado oil

The utensils used to prepare this recipe were a Wok, a wooden spoon, and little bowl.

Tips for making this Chorizo Fried Rice

Now that we have our the ingredients needed for the fried rice recipe, I’ll give you some of my tips:

  1. For the white rice, we need it to be at least a day old, and cold, which will help with the texture of the fried rice. Just cooked rice will make your fried rice sticky, for this reason, I don’t recommend it.
  2. Using frozen mixed vegetables makes it an easy way to add veggies to your dish. It may not be as authentic as Chinese cuisine, but it works.
  3. The oyster sauce is my secret ingredient. It provides another depth of flavor that compliments the pork chorizo.
  4. The sesame oil will provide another layer of flavor to the fried rice. You don’t need much, so a little goes a long way.
  5. You can replace the white rice, with brown rice to increase the fiber intake.
  6. If you don’t have avocado oil, you can replace it with vegetable oil. Just use an oil that has a mild flavor.

Chorizo Fried Rice Preparation

The preparation for this recipe is simple. First, we are going to start dicing our yellow onion. Next, we will prepare our sauce, in a bowl mix the low sodium soy sauce, the oyster sauce and the sesame oil. Also, we are going to remove the casing from our chorizos.

Cooking Chorizo Fried Rice

Now, on to the cooking of the fried rice. To start the cooking process we would do is to heat up the wok and add the chorizo pieces. Cook until there are browned and fully cooked. Make sure to break them apart during cooking. Remove from the wok and set aside.

Next, we will half a tsp of sesame oil and avocado oil to the wok and saute the onion for a couple of minutes. Then add the garlic and saute for one more minute.

Now add the bag of frozen mixed vegetables and cook until the vegetables have softened. Make sure to stir constantly, so the vegetables cook evenly.

Add your white rice and mix in with the vegetables. Next, add your sauce and continue stirring for two more minutes.

Pork Chorizo Fried Rice

This Chorizo Fried Rice is just what you need for lunch or dinner, an explosion of flavors in your mouth and it just takes 30 minutes to make.

  • 1 bag frozen mixed vegetables (carrots, corn, green beans, peas & lima beans) (16 oz / 454 g)
  • 3 cups cooked white rice
  • 1 small yellow onion
  • 1 tsp chopped garlic
  • 5 pork chorizos (I used chorizo "tableño" which are made in Las Tablas, but they are mainly made of pork. (aprox 1 pound))
  • 2 tsp avocado oil (divided)

Sauce

  • 3 Tbsp low sodium soy sauce
  • 1 Tbsp oyster sauce
  • 2 tsp sesame oil (divided)
  • 3 scallions or green onions ((optional, used for garnish))

Prep

  1. Dice the yellow onion.

  2. Remove the chorizos from their casing.

  3. Mix the low sodium soy sauce, oyster sauce and 1 tsp of the sesame oil and set aside.

Cook

  1. In a wok fry your chorizos until fully cooked through. Remove from the wok and set a side.

  2. In the same wok, heat the avocado oil with 1 tsp of sesame oil.

  3. Saute the diced onion for a couple of minutes. Next, add the garlic and saute for 1 more minute or until fragrant.

  4. Add your frozen mixed vegetables and cook for 5 minutes or until the vegetables have softened. Make sure to stir constantly, so the vegetables cook evenly.

  5. Add your rice and mix with the vegetables. Then add your sauce and continue stirring for a couple of minutes.

  6. Garnish with some scallions or green onion, and your chorizo fried rice is ready to be enjoyed!

  1. You can replace the white rice, with brown rice to increase the fiber intake.
  2. If you don’t have avocado oil, you can replace it with vegetable oil. Just use an oil that has a mild flavor.
  3. If you can’t get the Panamanian chorizo you can use normal pork chorizo. Or even switch thing up a little with another type of chorizo, or even chicken or meat. This will probably change the end result flavor, but I can imagine it would taste great too.

Hello, it is me again with another smoothie recipe. Hope you are enjoying your week since soon it would be the weekend. I have been trying out a lot of smoothie recipes lately. I’m working on a secret project. Once I have more information I will share it with you. Hopefully, you will enjoy it.

This blueberry cheesecake smoothie is a more indulgent one. This time I didn’t add any veggies to it. I like some balance when I eat, not always it is the healthiest meal. This smoothie is usually a snack after lunch. I love the flavor combination, blueberry, and cream cheese plus a couple more ingredients that make the flavors compliment each other really well.

For this recipe, we will need the following ingredients:

  • frozen blueberries
  • half of a frozen banana
  • cream cheese
  • milk
  • maple syrup

  • 1/2 cup frozen blueberries ((70 g))
  • 1/2 frozen banana ((40 g))
  • 1/2 cup milk ((125 ml))
  • 2 Tbsp cream cheese
  • 1 tsp maple syrup
  • 1 tsp vanilla extract
  1. Add all the ingredients to your blender and blend away. Enjoy! 

You can replace the maple syrup with brown sugar.

Lemon Wild Berry Cold Brew Iced Tea | nashifood.com

Iced teas had been a thing lately, seems they are related to hot climates. When I lived with my mom, she used to make iced tea almost every week. The traditional flavor was black tea with lemon. Everybody at home wanted some, and it did not last long in the fridge. A few weeks ago, I went to her house and she gave me two small tea bags of a new tea she had bought. She also gave me a taste of the iced tea she made. The taste was heavenly, super refreshing just what I needed that day. I came back home thinking about making it, but I didn´t have enough tea bags to make a big batch, so I bought some more.

She told me to steep the tea bags in hot water. Then let it cool. Since I tested the cold brew method and enjoyed the results, I gave it a try, and it turned out great. To make this delicious and refreshing Lemon Wild Berry Cold brew Iced Tea follow the steps on How to cold brew tea post. You will need to cold brew the tea first. You can also prepare it the night before and then just mix the add-ins.

For the recipe, you will need:

  • 32 fl. oz of  wild berry cold brew black tea
  • juice of 2 lemons
  • 3/4 cup of brown sugar

To start, squeeze your two lemons. Then, add the juice to your cold brew tea and stir. Microwave 1 cup of water in a glass for one and half minutes. Next, stir in the brown sugar into the water until it has dissolved. This water and sugar mixture will create a simple syrup that will sweeten the iced tea. Add this simple syrup to your cold brew wild berry tea and stir. Serve with ice and enjoy!

Lemon Wildberry Cold brew Iced tea is a simple and refreshing drink without bitter flavor!

  • 32 fl. oz cold brewed wild berry tea ((made with 6 wild berry tea bags, see <a href="https://nashifood.com/how-to-cold-brew-tea/">How to cold brew tea</a> for the steps))
  • 3/4 cup brown sugar
  • 2 lemons

Cauliflower Rice is a great low carb side dish alternative to rice.

How to make cauliflower rice. | nashifood.com

The main reason I started trying out the cauliflower rice was to have a low carb alternative to rice for dinner. This idea started because I visited a nutritionist and she gave me a few tips to guide me in my fat loss journey. Being a Panamanian makes it hard not to eat rice in general. We do love our rice! A typical Panamanian food plate would have a bunch of white rice, any protein on the side, beans, and a fried plantain.

Since I’m trying to incorporate more veggies into my diet, I said let’s give it a try. Lucky for me it worked out perfectly. For lunch, I usually had my rice portion, but I added some of the cauliflower “rice” to make it seem more rice volume. For dinner, I only had a couple of portions of cauliflower rice and my protein of choice.

When I tried to switch things up for dinner, I used it to make fried rice. Another day, I used it to make mushroom cauliflower rice. With this cauliflower rice, you can try and replicate other rice recipes, but the cooking method would be different. I have found that sauteing or frying the cauliflower works best.

Lately, cauliflower rice has become a thing on the internet. In Panama, you can buy it ready to cook in the freezer section of the grocery store. But I noticed that if you buy it ready to cook, you will get a 12 oz bag for almost $5, and for that same amount of money in the market, I could get between 2 and 3 pounds of cauliflower ($1.50 or $1.75 per pound). So I figured out why not try to do it myself at home.

How to Prepare Cauliflower Rice

The first thing you will need is a cauliflower head. Look for one that is not bruised and has green leaves. What I do first remove all the leaves. Then I wash it with abundant water and pat it dry. I have two methods of making the cauliflower rice which I will explain in detail below.

Preparation Method # 1

For this first method, you will need a box grater. The first thing I do is cut the cauliflower head in two. Then with the medium size holes side, I start shredding the cauliflower head.  Repeat until all have been shredded. In the image below you will see how it turned out.

Preparation Method # 2

For this method, you will need a food processor. The first thing I do is chop the cauliflower head it into florets.  Next, take the florets and add them to a food processor and pulse between 8-10 times to get a rice like consistency. You don’t need it to be too fine because it can get too soft when cooking.

How to Cook Cauliflower Rice

Now on to the fun part, cooking the rice. You will need salt, garlic powder, onion powder and pepper, to prepare this easy side dish that can be pair with anything.

Sauteing is the method I found works best if you want to jazz it up. You will need a big frying pan or a wok. The reason you need a pan with a lot of surface area is to make sure that everything will cook evenly and not steam. Another tip, cook the rice in batches, you don’t want to add everything at once to the pan and then end up with a mushy cauliflower rice. For me, the cauliflower still needs to have a bite to it. I think it gives a more rice-like texture.

Heat up your wok to medium and spray some oil. You can use any oil you have on hand. I usually use coconut oil in spray form. Let the oil heat up, and then add the cauliflower and saute for at least 5 minutes. Stir continuously, and add, salt, garlic powder, onion powder and black pepper. Repeat with the rest of the cauliflower rice and that is it. Easy breezy.

How to make cauliflower rice - Cooking method

If you are cooking frozen cauliflower rice, you will need to thaw it first, for at least 5 minutes on the counter. Then the cooking process would be the same as mentioned above for the fresh cauliflower.

Storing and Freezing Cauliflower Rice

I have found that when it comes to freezing the cauliflower rice, the best way is to add it to a freezer bag once it already has been processed into rice, not cooked. You can freeze it for up to a month.

Just as a side note, don’t try to make the rice if you have frozen cauliflower florets, it didn’t work for me. Trust me I did that at the beginning because I was lazy and I ended up making cauliflower mash. But if you find a way to make it let me know!

For storing, I use an airtight container and keep it in the fridge. It has lasted me five days without issues. Hope you give this a try, I’ll be sharing a couple of cauliflower rice recipes in the coming months so stay tuned.

How to make Cauliflower Rice

Cauliflower Rice a versatile option and great low carb alternative to rice. 

  • 1 cauliflower head
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  1. Cut your cauliflower head into florets.

  2. Wash and pat dry.

  3. Add all the florets to the food processor, and pulse between 8-10 times until you get a rice like consistency. Transfer to a bowl.

  4. Heat a wok on medium and spray some oil. Divide your batch in two, and add it to the wok. Saute for 5 minutes stirring constantly. Add the seasonings. Repeat with the second batch.

  5. Now it is ready to be enjoyed!

A few months ago, I was experimenting with some smoothie flavors. After a few tweaks and remakes, I finally got a flavor combination that tastes great and that even my boyfriend likes. He is somewhat a picky eater when he doesn’t see common ingredients in smoothies.

Surprise I also added some veggies to the smoothie, I couldn’t skip the opportunity to add some more nutrition to it. I have noticed that lately, I’m always looking for ways to add more veggies to my diet. I think it is because I don’t like much preparing salads, don’t get me wrong, I do like them but when someone else prepares them. 😜

For me, smoothies are usually a part of my breakfast or a snack. I used the green tea because I love its taste. Green tea has a lot of antioxidants and health benefits.

I did a little test with cold brewing the green tea, and I noticed that I enjoyed it a lot more than brewing it the regular way and waiting for it to cool. The cold brewing method prevents it from getting a bitter taste. You can check out this post on How to Cold brew tea bags for the instructions to prepare it.

For this recipe, we will need the following ingredients:

  • cold brewed Sencha Japanese green tea
  • frozen pineapple
  • medium size green pear
  • fresh spinach

I didn’t include any sugar or sweetener because I’m working on reducing my added sugar intake. The green color comes from the spinach. Spinach also has antioxidants and vitamin K.

Pear contains vitamin C, fiber, and potassium. Pineapple also contains vitamin C. The pear and the pineapple gave it enough sweetness. As I mentioned before, my boyfriend enjoyed it, even without sweetener. The green pear also gives the smoothie a creamier texture. I left the skin on the pear, only removed the seeds and the stem. I didn’t use bananas because that is the common ingredient in all green smoothies and I wanted to switch things up a little bit.

As for the blender that I used, it is a Ninja Blender that just crushes and leaves everything ultra smooth. I have also tried making it using a regular blender. It does the job but sometimes you need to blend the green tea and the spinach first, and then add the rest of the ingredients. Following this step will prevent having some of the spinach chunks floating in your smoothie.

As seen in the photo I added the fruits first, then the green tea and lastly, I added the spinach. You would need to have the spinach close the blade, so it gets chopped properly. This trick applies for your regular blender too.

I usually like my smoothie somewhat thinner. Sometimes I use frozen pineapple instead of fresh, so it is extra cold. Tip: Put the spinach close to the blender blade, so you can ensure that the spinach is completely blended. In case you have a regular blender, first, blend the spinach and the cold brewed green tea until there are no more spinach pieces, and then add the fruits and blend until smooth.
