Fudgy Oat Flour Brownies

Equipment

Ingredients

  • 4 ounce bittersweet chocolate
  • 2 ounce milk chocolate
  • ½ cup pitted dates
  • ½ cup melted coconut oil
  • 2 eggs at room temperature, medium size
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • cup brown sugar
  • cup cocoa powder
  • cup oat flour + 2 tablespoons
  • ¼ cup walnuts chopped

Instructions

  • Preheat oven to 325°F.
  • Line a 10×7 baking pan with parchment paper. You can use a smaller baking pan if you prefer.
  • In a bowl melt chocolate in the microwave in 30 seconds interval at 50% power.
  • Soak your pitted dates in hot water for 5 minutes, then blend with a few teaspoons of water that you used to soak them. It should be a smooth paste.
  • In a large bowl mix all the wet ingredients: eggs, date paste, melted chocolate, vanilla extract and melted coconut oil.
    Note: Since the melted chocolate and coconut oil was a little warm, I added a little bit first and mix it well with the eggs to prevent them from scrambling, this is called tempering.
  • In another bowl mix the dry ingredients oat flour, cocoa powder, sugar, and salt.
  • Add the walnuts and fold the dry ingredients into wet ingredients until combined.
  • Place mixture in lined baking pan and bake for 35 minutes.
  • Remove from oven and let it cool completely.
  • Once cooled cut into 12 pieces and enjoy your fudgy brownies!

Notes

To melt the chocolate in the microwave, reduce the power to 50% and heat it in 30-second intervals. Stir between each interval to make sure it melts evenly. As a reference, I used a 1200 Watt microwave oven.
Since the weather in Panama is somewhat warm, I didn't need to melt the coconut oil. If you need to melt it, you can use the same method to melt the chocolate. Of course, it will take less time to melt. Or add them with the chocolate chips to melt.
If you don't have oat flour, you can make it at home. You will need to process oat flakes in a food processor as fine as you like.
Substitutions
  • Bitter or milk chocolate: you can use the full amount of either one or the other or mix it as I did.
  • You can omit the nuts. They were added to add another texture to the brownie. If you prefer, you can change it for chopped almonds.
  • Coconut Oil: If you are allergic or simply do not like coconut flavor, you can replace it with a mild-flavored oil like canola or vegetable oil.
How to store leftovers? You can store it in an airtight container for up to 3 days. To heat it, you can do it using a microwave for a few minutes.
Can I freeze them? You can also freeze them without problems for 1 month and a half. 
Can I make it gluten-free? If you need to make a gluten-free version, you will only need to look for certified gluten-free rolled-oats to make the oat flour. You can also check that the chocolate chips. The rest of the ingredients are gluten-free.
