Season the pork chops with the seasonings: salt, black pepper, garlic and dry thyme. Set aside, so the pork chops start absorbing the flavors.
Peel and dice the apples into small cubes and juliennes the onion.
Heat up your frying pan to medium heat and add a tsp of the olive oil to it. Once the oil is hot, add the julienne onions and saute for at least 15 minutes until they brown. If you see that it has been drying out, you can add a couple of teaspoons of water to the pan. Remove the caramelized onions from the pan and set aside.
Add another teaspoon of oil to the pan and let it heat up. Sear each pork chop for about 3-4 minutes on each side. Do this in batches and set aside.
Next, add the last teaspoon of olive oil to the pan, and cook the apples for a couple of minutes. Add the chicken stock and the blue cheese, stir and cook for two more minutes.
Add back the pork chops and the caramelized onions and let them simmer in the sauce for 5 minutes.
